Healthy Cookie

Over the holidays I made many "not good for you" cookies. They tasted great but a week later we are still feeling the overload effect. With a few days off I decided to try some "better for you" cookies. I would say "good for you" but I didn't have the correct ingredients to boast that.
These are called The Original Healthy No-Bake Cookie Recipe by Frugal Farm Wife.
1 cup peanut butter
1/2 cup honey
1/2 cup coconut oil
6 T cocoa powder
2 tsp vanilla
2 1/4 cups quick oats
Combine the first 4 ingredients in a sauce pan and warm gently on stove top. Add vanilla, oatmeal and stir well. Drop by spoonful onto wax paper lined cookie sheet. Store in airtight container in the refrigerator.
I remember my mom making cookies like these. I enjoyed her milk chocolate covered peanut candy better, but she had the right idea for "better for you".
